250 g peeled garlic cloves
3 tbsp sesame oil
1 tsp turmeric powder
2 tsp red chili powder
½ tsp fenugreek seeds
1 tsp mustard seeds
1 pinch asafoetida (hing)
2 lemon juice or tamarind
1 tsp salt (adjust to taste)

Preparation Steps
1. Peel and wash garlic cloves. Pat them completely dry to avoid moisture.
2. Roast fenugreek seeds lightly, cool, and grind to a fine powder. Powder mustard seeds as well.
3. Warm sesame oil and add garlic cloves. Fry till the garlic becomes soft.
4. Now add turmeric, salt and add tamarind water (if using tamarind)
5. Cook till oil separates and add lemon juice and off the stove
6. Add red chilli powder, fenugreek, mustard powder and asafoetida.
